Russian Cherry Cake Recipe of [Updated

The Russian cherry cake is a very special cake, from the dough to its shape. It is prepared with a dough without eggs, made of flour, butter, sugar and yogurt, which has a short pastry consistency. From this is obtained strips that are filled with pitted cherries and caster sugar, and then rolled to create small cylinders that will form a nice spiral. The final consistency is not that of a short pastry but a middle way between this and a brioche, difficult to explain, you have to try it!
When I saw this cherry pie in a video that was on facebook I imagined that it was a typical Russian recipe, but to be sure I asked a Ukrainian girl I know and she confirmed it, so I decided to try it and here is the recipe.

  • Dose for 1 26 cm mold :
  • 400 gr of flour 00
  • 100 gr of sugar
  • 180 gr of butter
  • 200 gr of Greek yogurt
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 500 gr of cherries
  • 100 gr of sugar
  • icing sugar

How to make Russian cherry cake

In a bowl process flour, sugar, butter, Greek yogurt, yeast and vanilla essence in a bowl.

You will have to obtain a smooth and compact dough.


Spread it now on a floured worktop, obtaining a sheet of pasta with a surface of about 30 cm x 40 cm.

Form equal rectangular strips and place clean, stoned cherries on each of these strips.

Then cover them with a little sugar.


Close each strip on itself obtaining cylinders.

Transfer them into a hinged mold covered with baking paper and form a spiral starting from the outermost part by chaining the various cylinders.


Bake the cake in the oven at 180 °C for 30 minutes.


Your Russian cherry cake is ready to be dusted with powdered sugar and served.
